Description
I added saffron to the dough in the form it is sold. I recommend trying to soak one saffron thread in one teaspoon of warm water and adding just the water to the dough. This way, the flavor will be evenly distributed throughout the dough, and the thread won't end up in the cookies. You can also make these cookies without saffron, but in my opinion, it makes them quite unique.
Ingredients
- Egg white - 3 pieces
- Sugar - 1.6 oz
- Saffron - 1 thread
- Almond Flour - 3.5 oz
Step by Step guide
Step 1
Place the chilled egg whites in a deep bowl and beat with a mixer, gradually adding the sugar until a stiff white mass forms.
Step 2
Add one saffron thread to the mixture. Mix well.
Step 3
Gradually add the almond flour in small portions and gently fold it into the whipped egg whites to prevent the mixture from deflating.
Step 4
Transfer the mixture to a piping bag and pipe small circles about 3.5 cm in diameter onto a baking sheet lined with parchment paper. I made 29 cookies.
Step 5
Place the cookies in the oven on the middle rack and bake for 40 minutes at 284°F.
Step 6
The cookies can be served with warm jelly, compote, or tea.
