Almond Tartlets with Fruit Custard
Ingredients
- Egg white - 2 pieces
- Powdered Sugar - to taste
- Butter - 3.5 oz
- Wheat Flour - 5.8 oz
- Ground Almonds - 2.3 oz
- Milk - 17 fl oz
- Vanilla salt - 1 teaspoon
- Sugar - 3.5 oz
- Corn Starch - 1.6 oz
- Fresh Berries - to taste
Step by Step guide
Step 1
For the custard: bring the milk to a boil with 50 grams of sugar and a halved vanilla pod or 1 teaspoon of vanilla extract.
Step 2
Meanwhile, whisk the egg yolks with the remaining 50 grams of sugar.
Step 3
Add the cornstarch and mix thoroughly.
Step 4
Strain the boiling milk (if using a vanilla pod).
Step 5
Pour part of the milk into the egg yolks, mix, and then pour back into the remaining milk. Return to medium heat, stirring constantly until thickened. Remove from heat and mix well. Return to heat for another minute. Pour the custard into a flat dish with edges and let cool.
Step 6
For the dough: whisk the egg yolk with powdered sugar and softened butter at room temperature. Add the sifted flour and ground roasted almonds. Knead the dough and refrigerate for 40 minutes. Line the tartlet molds with dough about 5 mm thick. Depending on the material of the molds, you may need to grease them with butter. Prick the bottom of the dough, add weights, and bake for 15 minutes at 180-200°C.
Step 7
Puree the fruits or berries, removing seeds or skins if necessary (pass through a sieve if needed), and reduce if the puree is not very thick.
Step 8
Assembly: mix the custard with the puree in the desired ratio. Fill the cooled tartlets and decorate with berries. Dust with powdered sugar before serving.
