- Wheat Flour - 15 oz
- Butter - 10 oz
- Chicken Egg - 2 pieces
Step by Step guide
Step 1
For the dough, beat the butter and 50 grams of sugar in a large bowl until smooth. Add 1 egg and the yolk (the second egg white will be used later). Whisk together for just under 1 minute; it should look a bit like scrambled eggs.
Step 2
Then add 350 grams of flour and start mixing with a wooden spoon. When the dough comes together, continue kneading with your hands. Gently shape the dough into a ball, wrap it in plastic wrap, and chill for 45 minutes.
Step 3
Peel the apples, remove the cores, and slice them into pieces about 5 mm thick.
Step 4
Cover a baking tray with a layer of paper towels. Arrange the apples in a single layer on the towels, cover them with more paper towels, and then place another layer of apples on top, which should also be covered. Leave the apples like this while you prepare the dough.
Step 5
Now mix 140 grams of sugar, cinnamon, and 50 grams of flour in a bowl large enough to hold the apples.
Step 6
Preheat the oven to 340°F on the convection setting. Lightly whisk the egg white with a fork. Cut off one third of the dough and keep it wrapped in plastic wrap; roll out the remaining dough and place it in the baking dish.
Step 7
Pat the apples dry again with a paper towel, toss them into a bowl, quickly mix with your hands, and spread them over the dough.
Step 8
Moisten the edge of the dough with water, place the remaining rolled-out dough on top, and pinch the edges together. Trim any excess. Make five slits in the pie for steam to escape.
Step 9
Brush the pie with egg white, sprinkle with powdered sugar, and bake in the oven for 40 to 45 minutes.
Step 10
Then remove and let sit for 10 minutes. Serve.
