American Apple Pie with Nut Topping

Ingredients

  • Wheat Flour - 17.6 oz
  • Sugar - ¾ cup
  • Butter - 7.1 oz
  • Salt - a pinch
  • Vinegar essence - 1 tablespoon
  • Water - 2 tablespoons
  • Pickled Apples - 8 pieces
  • Meyer Lemon Juice - 0 fl oz
  • Ground Cinnamon - 1½ teaspoons
  • Nutmeg - ½ teaspoon
  • Ground clove - 1 teaspoon
  • Brown Sugar - ⅔ cup
  • Chopped almonds - ½ cup
  • Vanilla Ice Cream - 1.8 oz

Step by Step guide

Step 1

In a bowl, mix flour (2 cups), sugar (2 tablespoons, leveled), and salt. Add butter (100 g), cutting it with a knife. The dough should be crumbly. Add vinegar (6–7% acidity) and water. Add more water if necessary to bind the dough and form a ball. Place in a bag and refrigerate while preparing the filling (about 30 minutes).

Step 2

Once the filling is ready, take the dough out of the refrigerator and roll it out on a floured surface to form a circle. Transfer it to a greased pie dish (for easier transfer, roll between 2 sheets of parchment paper). The dish should be deep enough. Press the dough with your fingers on the bottom and sides, trimming any excess that hangs over the edges. Place in the refrigerator to chill.

Preheat the oven to 392°F.

Step 4

Peel the apples (choose sweet varieties), cut them in half and remove the seeds. Slice the apples into pieces. In a large bowl, toss the apples with lemon juice to prevent browning.

Step 5

In a small bowl, mix sugar (½ cup), cinnamon, cloves, nutmeg, salt, and flour (3 tablespoons). Combine the apples with the flour mixture and stir.

Step 6

Pour the apple filling into the pie dish. Place it in the oven. Put foil under the pie dish in the oven to catch any spills. Bake for 25 minutes.

Step 7

Using your fingers, rub the butter (80 g) and flour (1 cup, heaping) together. The butter should remain in small clumps. Add the brown sugar and chopped pecans (you can substitute with walnuts or ⅔ cup of oats). Chill in the refrigerator.

Step 8

Remove the pie from the oven. Increase the temperature to 410°F. Cover the pie with the topping, making sure to cover the apples, and mound the filling slightly in the center. Press down. Place the pie back in the oven for 25–30 minutes (until golden brown).

Step 9

Cool the pie to room temperature. Serve warm with ice cream (the recipe specifies the weight of ice cream for 1 serving).
