- Wheat Flour - 8.8 oz
- Butter - 4.4 oz
- Cheshire Cheese - 4.4 oz
- Whole egg - 1 piece
- Chicken Egg - 1 piece
- White Pepper (whole) - 1 tablespoon
- Salt - ½ spoons
Step by Step guide
Step 1
In a bowl, mix the flour, pepper, and salt.
Step 2
Cut the cold butter into cubes, add it to the bowl with flour, and rub it between your fingers until it resembles coarse crumbs (you can also use a mixer on pulse mode).
Step 3
Crack the egg into a separate bowl, beat it with a fork, and mix it into the dough.
Step 4
Grate the cheese on a coarse grater.
Step 5
Add the cheese to the dough and mix well.
Step 6
Dust the countertop with flour and roll out the dough to a thickness of 5 mm.
Step 7
Use a glass or a cookie cutter to cut out circles from the dough.
Step 8
Place the cookies on a baking sheet lined with parchment paper and brush them with beaten egg yolk.
Step 9
Bake in a preheated oven at 302°F for 20 minutes, until a rich golden color is achieved.
Step 10
Cool the cookies, remove them from the baking sheet, and store them in a glass jar.
