- Wheat Flour - 7.1 oz
- Butter - 3.5 oz
- Farm fresh eggs - 2 pieces
- Pumpkin - 15.9 oz
- Sugar - 3.5 oz
- Cream - 4 fl oz
- Cinnamon - 0 oz
- White Beans - 1 piece
Step by Step guide
Step 1
Sift the flour and a pinch of salt into a bowl, add the butter, and mix until crumbly; lightly beat 1 egg with a fork, add it to the dough, and knead until smooth; shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
Step 2
Peel the pumpkin, remove the seeds, and cut the flesh into cubes.
Step 3
Place the pumpkin in a heavy-bottomed pot or saucepan, add 100 ml of water, and simmer over low heat for 10 minutes until the liquid evaporates and the pumpkin is tender.
Step 4
Puree the pumpkin with a blender; split the vanilla bean lengthwise and scrape out the seeds; add the vanilla seeds, sugar, the remaining egg, cream, and cinnamon to the pumpkin puree, and whisk until smooth.
Step 5
Spread the dough evenly in a pie dish, create edges, and prick the surface of the dough with a fork; bake in a preheated oven at 374°F for 15 minutes.
Step 6
Pour the pumpkin mixture into the baked crust and bake for another 35 minutes at 392°F.
Step 7
Allow the pie to cool, slice, and serve.
