I have baked this pie more than once. It always turns out picture-perfect. Don't pay attention to comments suggesting changes to the recipe. Strictly follow this recipe, and you will succeed.

- Wheat Flour - 15 oz
- Butter - 10 oz
- Chicken Egg - 3 pieces
- Pumpkin - 30 oz
- Sugar - 5 oz
- 10% cream - 5 fl oz
- Cinnamon - to taste
- Vanillin - to taste
- Salt - to taste
Step by Step guide
Step 1
Sift the flour and salt into a deep bowl. Rub in the softened butter between your palms until the mixture resembles bread crumbs, then add a lightly beaten egg and knead the dough. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 30 to 50 minutes. If the dough doesn't come together and crumbles, add 1 to 2 teaspoons of cold water.
Step 2
Peel the pumpkin and remove the seeds. Cut the flesh into cubes. Place in a heavy-bottomed pot or saucepan, add a little water, and simmer until soft and all the liquid has evaporated. Blend the flesh into a smooth puree. For extra creaminess, you can pass the resulting puree through a sieve.
Step 3
Roll out the dough on a lightly floured surface and line a round, shallow baking dish with a diameter of about 25 cm. Place a sheet of parchment paper on top of the dough and fill it with any kind of grain. This will help the crust bake evenly. Bake for 15 minutes at 375°F.
Step 4
Place the pumpkin puree in a deep bowl and whisk it together with two eggs, sugar, cream, spices, and salt. Pour the mixture into the pre-baked crust. Bake the pie for 50-55 minutes at 355°F. Once the pie has cooled, it can be safely sliced into portions.
