Description

An amazing pie with an interesting history and a rich palette of flavors. It all depends on your imagination and, of course, the ingredients. More on that below in the tips. This pie is great because almost all ingredients can be replaced with alternatives. You can make it with regular cheese and regular sugar. You can substitute the flour with corn or barley flour. However, if you, like me, want to recreate the taste enjoyed by the ancient Greeks and Romans, follow these tips. Use the richest sour cream available in the store; if you're up for it, you can visit the market to get some homemade. Use cane sugar. Regular sugar won't give the right taste, as the Greeks didn't use 'beet' sugar back then. No one used it at that time. There's no need to extinguish the baking soda. Cheese. This is a separate story. There’s a detailed history about it in the recipe. Ideally, use feta, although regular semi-hard cheese might work too. Olive oil. Ingredients

  • Wheat Flour - 14.1 oz
  • 20% Sour Cream - 8.8 oz
  • Chicken Egg - 1 piece
  • Raw cane sugar - 1 tablespoon
  • Feta cheese - 15.9 oz
  • Activated Baking Soda - ½ teaspoon
  • Parsley - to taste
  • Green onion tops - 1 bunch
  • Dill - to taste
  • Ground Caraway - to taste
  • Ground clove - to taste
  • Cilantro - to taste
  • Salt - to taste
  • Olive Oil - to taste

Step by Step guide

Step 1

Prepare the dough. Mix the egg, sugar, sour cream, baking soda, and flour. Mix thoroughly and let the dough rest for about 15 minutes.

Step 2

Grate the feta cheese on a fine grater.

Step 3

Then finely chop a large amount of green onions.

Step 4

Mix the onions with the grated cheese, add salt to taste, spices, and herbs.

Step 5

Divide the dough into 2 parts — one larger, the other smaller. Take the larger part, roll it out, and place it in a frying pan greased with olive oil.

Step 6

Spread the cheese mixture evenly on top.

Step 7

Then roll out the smaller part of the dough thinly and cover the pie with it, sealing the bottom and top layers together.

Step 8

Place the pie in a preheated oven at 200–428°F for 20–25 minutes.

Step 9

Serve this dish with cream or sour cream.
