Here’s the trick: in angel food cake, the fluffiness is achieved solely through the air in the egg whites. Don’t overlook the cream of tartar — it helps stabilize the egg whites, preventing the cake from collapsing. Typically, after baking, nothing else is done with the angel food cake; it is simply drizzled with a sugar glaze. When cutting the finished cake, it’s best to use a serrated knife: a straight-edged kitchen knife will squish it.

  • Powdered Sugar - 6.7 oz
  • Wheat Flour - 4.6 oz
  • Cream of tartar - 0.2 oz
  • Vanilla extract - 1 tablespoon
