Ingredients

  • Wheat Flour - 15.9 oz
  • Butter - 12.3 oz
  • Sugar - 14.8 oz
  • Whole egg - 3 pieces
  • Chicken Egg - 2 pieces
  • Meyer Lemon Juice - 1 cup
  • Citrus Zest Mix - 2 pieces
  • Water - 1 fl oz

Step by Step guide

Step 1

In the sifted flour, add 225 g of cold butter (cut into pieces), 115 g of sugar, and 3 egg yolks. Mix everything together. Add water and knead the dough.

Step 2

Place the dough in a parchment-lined baking dish and smooth the edges. Put it in a preheated oven at 392°F for 30–40 minutes.

Step 3

For the filling, cream the remaining sugar with the butter. Add the eggs and grated lemon zest. Add the lemon juice.

Step 4

In a water bath, cook the mixture, stirring constantly, until it thickens. Let it cool.

Step 5

Cut the cake into two parts and spread the cream on top. The pie can be dusted with powdered sugar.
