Description

This pie has an unexpectedly rich, spiced flavor, with a texture that makes it feel as though the apples are swimming in fragrant, thick jelly. Whether you use liquid honey or thick, it doesn't matter; you still need 200 grams, as the sugar content doesn't depend on its thickness. Ingredients

  • Wheat Flour - 7.1 oz
  • Butter - 3.5 oz
  • Salt - a pinch
  • Lemon - 1 piece
  • Apple - 3 pieces
  • Honey - 7.1 oz
  • Chicken Egg - 3 pieces
  • Cinnamon - a pinch
  • Clove - 2 pieces
  • Pistachios - 1 tablespoon

Step by Step guide

Step 1

Prepare a crumbly dough using flour and butter with a pinch of salt. Shape it into a ball and refrigerate for at least 30 minutes, preferably for an hour.

Step 2

Zest the lemon and squeeze out its juice. Mix both in a bowl, add 3 eggs, a heaping teaspoon of flour, a pinch of cinnamon, and a bit of cloves — just remove the round tops from 2 cloves and crush them with your fingers. Whisk the mixture thoroughly. Using the same whisk, mix in the honey and let it steep for 20 minutes, stirring occasionally.

Step 3

Roll out the dough to a thickness of 2–4 mm and line a baking dish with it, ensuring that the sides are also covered with dough. Poke several holes in the bottom with a fork to prevent the dough from puffing up.

Step 4

Peel the sweet apples and remove the cores. Cut them into fairly thick slices. Arrange the slices tightly in a circle in a baking dish, then place it in a preheated oven at 392°F.

Step 5

After 15 minutes, strain the lemon-honey mixture through a sieve, open the oven, and pour it over the apples without removing the baking dish to prevent it from cooling down. Reduce the heat to 320°F and close the oven for another 30 minutes. Ten minutes before it's done, sprinkle with pine nuts.
