Apple Cake with Mascarpone Cheese

Ingredients

  • Wheat Flour - 5.5 oz
  • Powdered Sugar - 2.8 oz
  • Citrus Zest Mix - to taste
  • Butter - 3.2 oz
  • Whole egg - 1 piece
  • Salt - a pinch
  • Chocolate eggs - 3 pieces
  • Mascarpone Cheese Unagrande - 14.1 oz
  • 10% cream - 5 fl oz
  • Gelatin - 0.9 oz
  • Fruit Jelly - 1 piece
  • Water - 3 fl oz
  • Apple - 10.6 oz
  • Calvados - 2 tablespoons
  • Sugar - 2 tablespoons

Step by Step guide

Step 1

In a bowl, mix the flour, sugar, zest, and salt.

Step 2

Rub the mixture with butter (60 grams), add the yolk and 2–3 teaspoons of cold water.

Step 3

Knead the dough until homogeneous (a mixer can be used).

Step 4

Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.

Step 5

Preheat the oven to 180–374°F.

Step 6

Grease a mold with a diameter of 23–24 cm with butter.

Step 7

Line the mold with dough, creating edges. Prick the dough with a fork. Place parchment paper on the dough and sprinkle with rice, peas, or beans (to ensure the paper adheres tightly to the dough).

Step 8

Bake in the preheated oven for 30 minutes.

Step 9

Remove the mold and let it cool.

Step 10

For the cream, soak the gelatin in 5 tablespoons of cold boiled water for the time indicated on the package.

Separate the yolks from the whites of 3 eggs.

Beat the yolks with powdered sugar until pale (vanillin can be added).

Add the cream and whip until slightly thickened.

Step 14

Add the mascarpone and continue to whip at low speed until homogeneous.

Heat the gelatin in the microwave or in a water bath until completely dissolved. Slowly pour it into the cream. Whip lightly.

Step 16

In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Quickly and carefully fold them into the cream with a spatula using bottom-up movements.

Transfer the cream to the baked dough base and smooth the surface.

Place in the refrigerator for 40–50 minutes.

Step 19

Peel the apples, removing the core. Slice them thinly.

Step 20

In a skillet, melt the butter (30 grams), add the sugar (2 tablespoons), and caramelize while stirring.

Step 21

Add the sliced apples and sauté (you can add orange and lemon zest to taste) for about 2–3 minutes. Pour in the Calvados. Simmer the mixture over medium heat until all the liquid evaporates (about 15 minutes). Optionally, you can add ground almonds or raisins to the mixture.

Spread the filling over the mascarpone cream.

Step 23

Pour the fruit filling with cake jelly (the recipe is indicated on the package). If there is no ready-made jelly, you can prepare a regular one from sugar syrup.

Put the cake back in the refrigerator to set completely for 4–5 hours or overnight.

Step 25

Remove the sides of the mold and take out the cake.

Step 26

Decorate as desired (with whipped cream and almond flakes; chocolate crumbs; nuts).
