- Chicken Egg - 3 pieces
- Sugar - 6.3 oz
- Wheat Flour - 4.6 oz
- Activated Baking Soda - a pinch
- Meyer Lemon Juice - 1 tablespoon
- Apple - 3 pieces
- Butter - to taste
- Breadcrumbs - 0.7 oz
- Salt - a pinch
Step by Step guide
Step 1
Separate the eggs into whites and yolks.
Step 2
Whisk the egg yolks until pale with 1 cup of sugar.
Step 3
Add a pinch of salt to the egg whites and whip them separately until fluffy.
Step 4
Gently fold the egg whites into the yolks using a spatula, being careful not to deflate the mixture.
Step 5
Sift the flour and incorporate it into the dough.
Step 6
Dissolve the baking soda with lemon juice and add it to the dough. Mix the dough well again.
Step 7
Slice the apples into thin wedges.

Grease the baking dish with butter and sprinkle with breadcrumbs.

Arrange the apple slices in a circle at the bottom of the baking dish.

Pour the batter into the mold, gently spreading it over the apples.

Bake the charlotte in a preheated oven at 356°F for 45–50 minutes. Check the doneness of the batter with a skewer: if it comes out clean, the charlotte is ready. Allow the finished pie to cool; it will taste better an hour after baking.
