Description

A Soviet faceted glass was used as a measuring cup for 14 kopecks :-) To slice the strudel beautifully, it's necessary to use a very sharp knife, but instead of cutting, you should saw it gently, relying on the weight of the knife. This way, you won't break the top crust.

Ingredients

  • Wheat Flour - 1 glass
  • Water - ½ glasses
  • Durum wheat - 1 glass
  • Vegetable Oil - 3 spoons
  • Salt - ½ spoons
  • Apple - 2 lbs
  • Brown Sugar - ¾ glasses
  • Chopped almonds - 1.8 oz
  • Light Raisins, Seedless - 3.5 oz
  • Roasted Peanuts - 1.8 oz
  • Cognac - 1 fl oz
  • Breadcrumbs - 4 spoons
  • Butter - 1.8 oz
  • Powdered Sugar - 1.8 oz

Step by Step guide

Step 1

Combine all the flour with the salt and sift it. In a bowl or food processor, add 1.5 cups of the flour mixture, pour in warm water and vegetable oil, and mix everything well. The dough should be soft but not sticky to your hands, so add more flour as needed. Then cover the bowl with a towel and let it rest for 30 minutes.

Chop the nuts.

Soak the raisins in brandy for about 15 minutes, then drain the excess brandy.

Step 4

Wash the apples, peel them, cut them in half, remove the cores, slice each half again into quarters, and then cut everything into thin wedges. Toss the wedges with breadcrumbs, sugar, nuts, cinnamon, and raisins.

Step 5

Divide the dough into 4 equal parts. Roll out four thin sheets. The dough should be almost transparent. If you have a pasta machine, that would be perfect.

Step 6

Layer the sheets overlapping on a kitchen towel or plastic wrap. Dust them with flour and roll over them a few times with a rolling pin to help the layers stick together.

Step 7

Preheat the oven to 180–374°F.

Step 8

Brush the layers with melted butter. Then evenly distribute the filling, leaving about 2 cm from the edge. Roll the pastry sheets into a log using a towel, tucking in the sides to seal everything. Then, using the towel, transfer it to a greased baking sheet (you can line it with parchment paper). Brush the strudel with melted butter.

Step 9

Bake for about 40 minutes, occasionally brushing the surface with butter. In the last 5 minutes, you can place it under the broiler.

Step 10

Dust the finished strudel with powdered sugar. It can be enjoyed hot or cold.
