For a 23 cm pan.

Ingredients

  • Apple - 3 pieces
  • 10% cream - 3 fl oz
  • Wheat Flour - 7.1 oz
  • Butter - 3.5 oz
  • Chicken Egg - 3 pieces
  • Salt - a pinch
  • Vanilla salt - to taste
  • Brown Sugar - 4.6 oz

Step by Step guide

Step 1

In a bowl, mash the cold butter with flour and salt using a fork until it forms a uniform crumb. Add 1 egg and mix. Pour in 1 tablespoon of cold water and knead the dough by hand until smooth and homogeneous. Roll it into a disk the size of the pan, place the dough in the pan, trim the excess, and refrigerate for 30 minutes.

Step 2

Peel the apples, cut them into quarters, remove the cores, and slice them thinly.

Step 3

In a bowl, whisk together 2 eggs with 50 g of sugar. Add 1 tablespoon of flour, mix, then pour in the cream and stir until smooth.

Step 4

Layer the apples in the pan in 2 layers, sprinkling each layer with 1 tablespoon of sugar. Bake in the oven at 392°F for 20 minutes. Then remove the pie, pour the cream-egg mixture over it, but not to the very edge, as the filling will expand slightly, and return it to the oven for another 20-25 minutes until ready, when the filling is firm and golden. Five minutes before it's done, sprinkle with the remaining 2 tablespoons of brown sugar, and you can add a bit of cinnamon.
