  • Carrot - 6 oz
  • Wheat Flour - 4.9 oz

  • Raisins - 3.4 oz
  • Gingerbread-flavored syrup - 1 fl oz
  • Ground Cinnamon - 1½ g
  • Vanilla extract - 0 fl oz
  • Baking Powder - 0.2 oz
  • Salt - 0 oz
  • Activated Baking Soda - 0.1 oz
  • Freshly squeezed orange juice - 8 fl oz
  • Cottage cheese - 4.2 oz
  • Plant-based Cream - 4 fl oz
  • Butter - 0.2 oz
  • Apple - 6.2 oz
  • Powdered Sugar - 1.1 oz
  • Pecan - 15 pieces

Step by Step guide

Step 1

Reduce freshly squeezed carrot juice by three times, allow it to cool, and mix until smooth with plant-based cream, cottage cheese, and powdered sugar. Refrigerate the mixture for half an hour.

Step 2

For the batter, beat the eggs with 120 grams of sugar until frothy. Add grated carrots, flour, vegetable oil, walnuts, 35 grams of raisins, sugar syrup, baking powder, baking soda, salt, 1 gram of cinnamon, and vanilla essence. Mix in a blender on low speed.

Step 3

Pour the batter into muffin tins and bake at 356°F for fifteen to eighteen minutes. Allow the finished muffins to cool.

Step 4

Peel the apple and cut it into small cubes. Heat butter in a skillet, sprinkle the apple with the remaining raisins, sugar, and cinnamon, chop seven pecans, and sauté everything together. Cook over low heat for another fifteen to twenty minutes. Allow to cool.

Step 5

Create cone-shaped indentations in the finished cupcakes by cutting out about a third of the baked volume. Fill the cupcakes with apple filling.

Step 6

Decorate the cupcakes with cream cheese frosting and pecans.
