This recipe was shared with us by Alex Smith, a chef at a local American restaurant, participant in the O2 festival.
Ingredients
- Sugar - 4.2 oz
- Water - 23 fl oz
- Ground Cinnamon - 0.4 oz
- Apple - 27.5 oz
- Sea Buckthorn - 10.6 oz
- Rosemary - 0.1 oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Prepare the syrup. Mix 200 ml of water with cinnamon and 70 g of sugar. Place on low heat and simmer for 10 minutes after boiling.
Step 2
Peel the apples and slice them very thinly.
Step 3
In a ring mold, layer the sliced apples and brush with the cinnamon syrup, then add another layer of apples and syrup. Repeat 10–15 times.
Step 4
Bake for 45 minutes at 356°F covered with foil.
Step 5
Prepare the sea buckthorn sauce: add sea buckthorn, 50 g of sugar, and a sprig of rosemary to 500 ml of water.
Step 6
After boiling, blend, strain, and reduce.
Step 7
Dry the apple peels in the oven for 2 hours at 212°F. Blend into a powder.
Step 8
Cut the gratin in half in a semicircle.
Step 9
Serve on a plate with the sea buckthorn sauce on the side.
Step 10
Sprinkle with apple powder and sea buckthorn berries.
