Apple Kugel with Matzah
Ingredients
- Green Apples - 4 pieces
- Brown Sugar - ½ cup
- Orange juice concentrate - ¼ cup
- Matzah - 6 pieces
- Chocolate eggs - 8 pieces
- Salt - 1 teaspoon
- Ground Cinnamon - 1 teaspoon
- Sugar - 1½ cups
- Butter - 12 tablespoons
- Dried Apricots - 5.6 oz
- Light Raisins, Seedless - 6.7 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Cut the apples in half and remove the cores. Dice them into small cubes. Transfer to a bowl and add sugar and orange juice. Mix well.
Step 3
Break the matzah into small pieces, transfer to a bowl, and soak in 1 cup of warm water.
Step 4
Meanwhile, in a large bowl, beat the eggs. Add salt, sugar, cinnamon, 8 tablespoons of softened butter, raisins, and finely chopped dried apricots.
Step 5
Gently squeeze the matzah to drain the water, then add it to the egg mixture along with the apples. Mix well and transfer to a greased rectangular baking dish. Top with diced remaining butter.
Step 6
Bake for 1 hour (if the edges start to burn, cover the dish with foil). Cool to room temperature and serve.
