Ingredients
- Apple - 2 lbs
- Sugar - 1½ cups
- Egg white - 3 pieces
- Salt - to taste
- Wheat Flour - 3 cups
- Butter - 7.1 oz
- Vanillin - a pinch
- Ground Cinnamon - ½ teaspoon
- Sour Cream - 3.5 oz
- Activated Baking Soda - 1 teaspoon

Step 1
Separate the egg yolks from the whites, set the whites aside for a while, and mix the yolks with the chopped butter. Add half a cup of sugar, baking soda, salt, vanillin, and stir. Add sour cream, then add 3 cups of flour and knead the dough until it is pliable.
Step 2
Grease a baking sheet or a large baking dish with butter, sprinkle with flour, roll out the dough to a thickness of 0.8 cm, and lay it out, raising the edges. The quantities of ingredients in this recipe are calculated for a baking sheet. Therefore, it is important to use a large dish or baking sheet to ensure the dough layer is quite thin.
Step 3
Peel the apples from seeds and skin, slice them thinly, and arrange the apple slices on the dough in neat rows. Sprinkle the apples with ground cinnamon and place in the oven. Do not sprinkle with sugar to prevent the apples from releasing juice. Bake at 180–392°F for 40 minutes.
Step 4
While the pie is baking, beat the 3 egg whites with 1 cup of sugar, adding vanillin and a pinch of salt at the very beginning. You should achieve a very thick foam with sugar granules. Beat until it reaches a thick foam consistency.
Step 5
After 40 minutes, remove the almost finished pie, cover the apples with the egg white foam, spreading it evenly over the surface of the pie with a knife, and return it to the oven for another 15–20 minutes. The egg whites should turn into a crispy meringue.
