Description
A traditional dessert delight from Kolomna. Similar treats were made in many cities, but the most famous ones are from Kolomna and Tula. The Kolomna version, however, is the best.
Ingredients
- Green Apples - 2 lbs
- Black Rowan - 7.1 oz
- Egg white - 10 pieces
- Powdered Sugar - 1.8 oz
Step by Step guide
Step 1
Remove the cores from the apples (Antonovka is best, but you can also use Granny Smith), cut them in half, and bake in an oven preheated to 392°F for about twenty minutes.
Step 2
Cool, peel the skin off, and pass the remaining mixture through a fine sieve to remove all the fibers. Blend the resulting puree in a mixer for ten minutes.
Step 3
Pass the berries through a sieve and blend them with a mixer.
Step 4
Using a mixer or whisk, beat the egg whites until they form a fluffy white mass.
Step 5
Combine the apple and berry purees, then add the egg whites and whip with a mixer for another ten minutes.
Step 6
Place the result onto parchment paper in a baking tray, then put the tray in an oven preheated to 122°F for 10 hours.
Step 7
Then remove it from the paper, cut it into thick sticks, sprinkle with powdered sugar, and serve with black tea and lemon.
