  • Butter - 3.5 oz
  • Sugar - 8.8 oz
  • Wheat Flour - 4.1 oz
  • Almond - 5.6 oz
  • Ground Cinnamon - 0.1 oz
  • Applesauce - 8.8 oz
  • White Chocolate - 3.5 oz
  • Calvados - 1 fl oz
  • Gelatin - 0.7 oz
  • 33% Cream - 8 fl oz
  • Chicken Egg - 3 pieces
  • Vegetable Oil - 0 fl oz
  • Green Apples - 28.2 oz
  • Pectin - 0.4 oz
  • Pistachios - 1.1 oz
  • Lemon - ½ pieces
  • Vanilla Pod - 1 piece
  • Apple juice with pulp - 6 oz

Step by Step guide

Step 1

Prepare the almond dough. Mix together 100 g of butter, sugar, all-purpose flour, and almond flour, then add cinnamon and stir until the mixture resembles breadcrumbs. Chill the mixture and bake at 329°F for ten minutes until it turns a beautiful golden color.

Step 2

Prepare the apple cream. Reduce 50 grams of apple puree, then add melted chocolate. Create an emulsion by whisking together an egg and 100 grams of hot cream. Add Calvados and 150 grams of whipped cream, then mix well.

Step 3

Pistachio sponge cake. Whisk 2 eggs with 60 g of sugar. Add a mixture of the remaining wheat and almond flour, vegetable oil, and pistachio paste. Bake at 356°F for eight to ten minutes. Then place the sponge cake on the apple cream.

Step 4

Stewed Apple. Peel the apples, cut them into cubes, and add sugar (50 g), Calvados (15 g), pectin, and lemon juice. Simmer for about fifteen to twenty minutes.

Step 5

Apple jelly. Heat 200 g of apple puree and juice, then add gelatin (12 g) and sugar (40 g).

Step 6

Assemble the pastry in the following order: almond dough, apple cream, pistachio sponge, braised apple. Pour the still-warm jelly over the braised apple and allow it to cool.
