APPLE PIE OF THE SMITH SISTERS / www.commonkitchen.com The pie turns out incredibly delicious, with very little dough and a lot of apples. It’s great warm with ice cream, but also quite good cold. One of the favorites. The photograph is original, from the website. Ingredients
- Clear Apple Juice - 2 lbs
- Wheat Flour - 5.3 oz
- Sugar - 4.2 oz
- Milk - 3 fl oz
- Chicken Egg - 3 pieces
- Lemon - 1 piece
- Baking Powder - 1 tablespoon
- Salt - a pinch
- Butter - 1.8 oz
- Cinnamon - to taste
Step by Step guide
Step 1
Peel the apples and slice them thinly into wedges, then drizzle with lemon juice to prevent browning (sisters recommend the 'Golden' variety).
Step 2
Beat the eggs with sugar, salt, and zest, then add the flour with baking powder and milk. Whisk everything together until the mixture is smooth.
Step 3
Grease the baking tray with oil and sprinkle a little sugar on it.
Step 4
Mix 2/3 of the apples with the batter, and randomly place the remaining third on top on a baking sheet (preferably in a round shape, 27–28 cm in diameter). Don’t be alarmed: it may seem like there is very little batter and a lot of apples. The batter will lightly coat the apples, and that’s the essence of the dish. It will rise in the oven.
Step 5
Take cold butter and cut it into small pieces, then distribute it over the apples. Sprinkle a little sugar and cinnamon on top to taste.
Step 6
Preheat the oven to 356°F and bake for about 35–40 minutes.
Step 7
You can set aside a few segments to arrange them beautifully on top of the pie.
