Ingredients
- Egg white - 3 pieces
- Apple - 4 pieces
- Baking Powder - ½ teaspoon
- Sugar - 14.1 oz
- Wheat Flour - 14.1 oz
- Butter - 7.1 oz
Step by Step guide
Step 1
Separate the egg whites and yolks. Set the yolks aside. Whisk the yolks, gradually adding sugar (¼ cup, set aside the remaining sugar). Whisk until thick.
Step 2
Add the yolks, 200 grams of butter, 200 grams of sugar, ½ teaspoon of baking powder, and 400 grams of flour to a bowl. Whisk until crumbly (if it seems too homogeneous, add a bit more flour to prevent it from being too sticky). Set aside a portion of the dough (about ¼).
Step 3
Peel the apples and grate them on a coarse grater. Squeeze out some juice from the resulting mixture.
Step 4
Spread the dough on a baking sheet, but do not press it down, as it should remain airy; do not leave any holes. Then spread the grated apples on top. Sprinkle with the remaining sugar. Top with the egg whites and then sprinkle with the remaining dough.
Step 5
Preheat the oven to 160–338°F, and bake the pie for about 35–40 minutes until caramel colored.
