Description

If pieces of caramel appear in the syrup after adding water, just keep the mixture on medium heat, stirring until the caramel dissolves. You can bake it without weights; if the bottom puffs up, poke it with a fork and press it down with your hand.

Ingredients

  • Butter - 5.3 oz
  • Wheat Flour - 7.1 oz
  • Water - 6 teaspoons
  • Sugar - 2.6 oz
  • Apple - 4 pieces
  • Vanilla Pod - ½ pieces
  • Sweetened Condensed Milk with Coffee - 1 can
  • Chicken Egg - 2 pieces
  • Walnuts - to taste
  • Powdered Sugar - to taste
  • Salt - a pinch

Step by Step guide

Step 1

For the flaky chopped pastry, place flour, salt, and 100 grams of butter into a food processor and pulse until it resembles coarse crumbs. Add ice water and mix by hand to form the dough.

Step 2

Shape it into a ball, flatten it, and roll it out on a floured surface. Place it in a baking dish, trim the edges with a rolling pin, and prick the bottom with a fork. Chill in the refrigerator. For the filling, cut the apples into chunks.

Step 3

Place the sugar in a skillet and set it over high heat. Wait until the sugar starts to melt. Shake the skillet gently to distribute the sugar evenly and prevent it from burning. Once you have a brown caramel, splash in a little hot water and stir to create a thick brown syrup.

Step 4

Add the prepared apples and vanilla to the syrup, and simmer over medium heat until the apples release their juice, and then let the liquid evaporate.

Step 5

Add a piece of butter (50 g) and stir until the butter is combined with the sugar. The apples will become glossy and smell like caramel. Transfer them to a bowl and let them cool.

Step 6

To prepare the filling, mix the condensed milk with the eggs, using a blender if the mixture is very thick.

Step 7

Bake the base at 200 °C for 15 minutes.

Step 8

Place the apples in the tart shell and pour in the condensed milk filling. Bake at 170 °C (340 °F) for 40 minutes, or until the filling thickens and resembles jelly.

Step 9

Allow to cool completely before slicing, then sprinkle with coarsely chopped nuts and powdered sugar.
