Description

Apple, Raisin, and Candied Fruit Pudding

Ingredients

  • Rum - 5 fl oz
  • Vanilla salt - 0.4 oz
  • Fatty Beef - 3.5 oz
  • Apple - 7.1 oz
  • Raisins - 10.6 oz
  • Candied fruits - 3.5 oz
  • White bread - 7.1 oz
  • Jam - 3.5 oz
  • Sugar - 7.1 oz
  • Wheat Flour - 3.5 oz
  • Chocolate eggs - 4 pieces

Step by Step guide

Step 1

Chop the beef fat, separated from the membrane, on a cutting board, sprinkling it with flour to turn the fat into crumbs. Then place everything in a bowl, add raisins, diced Antonovka apples, and candied fruit (sugar-coated and dried orange and lemon peels), along with vanilla sugar.

Step 2

Place the stale bread with the crusts removed in a colander and crumble it into crumbs, which should be combined with the fat. Add black currant jam and sugar, pour in 100 g of rum, and add the eggs. Mix everything well.

Step 3

Grease a large napkin with oil, place it in the colander, fill it with the pudding mixture, tie the ends into a knot, and thread a stick through the knot to lower the pudding into a pot of boiling water, resting the stick on the sides of the pot.

Step 4

As the water evaporates, add boiling water and ensure that the pudding is always covered with boiling water and does not touch the bottom of the pot. It needs to be boiled for a long time (1 kg of pudding cooks for at least 1.5 hours).

Step 5

Once the pudding is ready, place it on a dish, pour the remaining rum over it, ignite the rum, and serve the flaming pudding at the table.
