Apple Strudel
Ingredients
- Wheat Flour - 8.8 oz
- Salt - 0.1 oz
- Vegetable Oil - 1 fl oz
- Water - 4 fl oz
- Apple - 4 lbs
- Sugar - 3.5 oz
- Raisins - 5.3 oz
- Lemon - 1 piece
- Vanilla extract - 0.7 oz
- Chopped almonds - 2.5 oz
- Butter - 2.5 oz
- Breadcrumbs - 1.8 oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Place the flour, salt, sunflower oil, and water into the mixer bowl. Mix using the 'hook' attachment until the dough forms a tight ball and wraps around the hook. The dough should easily pull away from the sides of the bowl.
Step 2
Place the dough on a work surface and gently shape it into a ball using your palms. Brush the ball with sunflower oil. Wrap it in plastic wrap, let it rest for half an hour, and then refrigerate for at least 2 hours. Before working with the dough, allow it to sit at room temperature for an hour.
Step 3
Peel the apples, remove the core, and cut them into large cubes. Place the apples and raisins in a bowl. Add sugar, lemon juice, and mix well. Once the apples start to release their juices, strain them through a sieve to remove excess liquid. Transfer the apples with raisins to a heavy-bottomed saucepan and simmer for a few minutes. The apples should maintain their cube shape but become soft. Add vanilla paste. Allow the apples to cool, then stir in lightly toasted almond flakes.
Step 4
Take a board measuring at least 70x70 cm. Cover it with a clean kitchen towel. Stretch the dough across the entire surface of the towel.
Step 5
Using a brush, lightly apply 50 grams of warm melted butter to the surface of the dough. Sprinkle the dough with breadcrumbs.
Step 6
Along one edge of the dough, place the filling in the shape of a log. Lifting the edge of the towel along with the dough from the side of the filling, and without touching the dough itself, begin to roll the strudel. After flipping it once, gently smooth out the folds of the dough on the body of the strudel. Continue rolling it up in this manner, lifting the towel and pushing the strudel with it, until it rolls onto its side.
Step 7
Transfer the finished strudel seam-side down onto a baking sheet lined with parchment paper. Twist the ends and trim any excess. Generously brush the strudel with the remaining melted butter. Bake at 338°F (340 degrees Fahrenheit) for about 20–25 minutes. Once baked, dust the strudel with powdered sugar.
