Ingredients
- Apple - 4 lbs
- Puff Pastry - 11.3 oz
- Water - 12 fl oz
- Vanilla salt - to taste
- Meyer Lemon Juice - 2 fl oz
- Milk - 18 fl oz
- Chicken Egg - 2 pieces
- Sugar - 8.1 oz
- Corn Starch - 0.9 oz
- Butter - 5.3 oz
- Cream - 16 fl oz
- Cinnamon - 0.1 oz
- Vanilla Ice Cream - to taste
- Whole egg - 3.4 oz
Step by Step guide
Step 1
First, prepare the components of the dessert. For the jam, peel and finely chop 1.5 kg of apples, then cover them with water, lemon juice, add vanilla, and mix all the ingredients in a saucepan.
Step 2
Cook over medium heat until the apples are soft (about 15 minutes), then blend with a blender. The jam is ready.
Step 3
To make the vanilla cream, combine milk, eggs, 90 grams of sugar, cornstarch, and vanilla in a saucepan and heat to 180°F.
Step 4
Turn off the heat and add the butter (50 g) at the end. Cover with plastic wrap directly on the surface. Cool in the refrigerator for several hours.
Step 5
To prepare the anglaise sauce, mix cream, 60 grams of sugar, pasteurized yolk, and vanilla in a saucepan and cook over low heat, stirring with a whisk until it reaches 180°F, then turn off the heat and cool.
Step 6
To make the cinnamon sugar glaze, melt butter (100 g) and mix with cinnamon and 80 grams of sugar.
Step 7
Now prepare the tart dough. Roll out the dough to a thickness of 2.5 mm and cut into squares of 12 cm.
Step 8
Place the cream and jam in the center.
Step 9
Peel and slice 400 grams of apples. Arrange the apples in a circle on top and brush them with the sugar glaze.
Step 10
Bake for 20 minutes at 356°F.
Step 11
Pour the anglaise sauce in the center of the plate, place the apple tart, add ice cream, and decorate with gold.
Step 12
Optionally, decorate with gold. Serve.
