Apple Turnovers with Gorgonzola and Walnuts
Ingredients
- Apple - 2 pieces
- Chopped almonds - ½ cup
- Goat cheese - ¼ cup
- Honey - 2 tablespoons
- Dried Chamomile - ½ teaspoon
- Puff Pastry - 14.1 oz
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Peel the apples and remove the cores, then chop them finely to yield 1.5 cups.
Step 2
Place the apples in a microwave-safe bowl and microwave on high for about 5 minutes until the apples are soft. Drain any excess liquid and lightly mash the apples to break them into small pieces, but do not turn them into a puree. Let cool.
Step 3
In a small bowl, mix the apples, walnuts, crumbled cheese, thyme, and honey.
Step 4
Preheat the oven to 392°F.
Step 5
On a floured surface, roll out the pastry and cut it into 24 squares, approximately 8x8 cm.
Step 6
Lightly beat the egg.
Step 7
Brush the edges of each square with egg and place about a heaping teaspoon of filling in the center. Fold the edges of the squares to form triangles and seal the edges tightly (you can crimp them with a fork).
Step 8
Place the turnovers on 2 parchment-lined baking sheets and chill for 5 minutes. Add a little water to the remaining egg and brush the tops of the turnovers.
Step 9
Bake for about 15–20 minutes until golden and cooked through. Let cool for 20 minutes and serve.
