Ingredients
- Green Apples - 1 piece
- Sugar - 1 cup
- Wheat Flour - 2 cups
- Salt - ½ teaspoon
- Activated Baking Soda - 2 teaspoons
- Ground Cinnamon - ½ teaspoon
- Chopped almonds - 1.2 oz
- Large eggs - 2 pieces
- Buttermilk - 1 cup
- Butter - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 392°F. Grease a muffin tin with butter.
Step 2
Peel the apple and remove the core, then cut it into 4 parts. Dice three parts into small cubes and slice the remaining part thinly.
Step 3
In a bowl, mix together sugar, flour, baking soda, salt, and cinnamon. Add the diced apples and walnuts. Mix well.
Step 4
In another bowl, whisk the eggs with buttermilk and softened butter.
Step 5
Gently combine both mixtures, being careful not to overmix to keep the batter light. Divide the mixture into the muffin cups, filling them three-quarters full. Top with the sliced apples and bake in the oven for 16–18 minutes until done. Let cool slightly and remove from the tin.
