Description
The key to success is a firm, juicy, and crispy apple, preferably from late summer or fall varieties that retain their qualities for a long time. The easiest option is to head to the grocery store and find 'Granny Smith' apples, as they usually work well in such recipes.

- Apple - 3 pieces
- Raisins - 1.8 oz
- Walnuts - 1.8 oz
- Honey - 3 spoons
- Brown Sugar - 2.8 oz
- Cinnamon - 0.4 oz
- Butter - 3.5 oz
- Milk - 3 fl oz
- Wheat Flour - 3.5 oz
- Corn Flour for Polenta - 1.8 oz
- Chicken Egg - 1 piece
- Whole egg - 1 piece
- Salt - a pinch
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
In a blender, combine cornmeal and 100 grams of cold butter until the mixture resembles fine crumbs.
Step 2
Add a chicken egg, a pinch of salt, and lemon juice. Gradually pour in cold milk while kneading the dough with your hands.
Step 3
Shape the dough into a ball, wrap it in plastic wrap, and place it in the freezer for 15–20 minutes.
Step 4
Peel the apples and remove the cores. Discard the peels and cores, but keep the stems — they will be useful for decoration.
Step 5
In a deep bowl, mix the sugar with cinnamon and coat the apples in this mixture.
Step 6
Chop the nuts coarsely with a knife. Rinse the raisins and mix them with the nuts.
Step 7
Divide the dough into three parts, roll each into a thin round sheet, trim the edges with a knife, and set aside the scraps for decoration.
Step 8
Place an apple in the center of the dough circle, fill the core with nuts and raisins, and drizzle a teaspoon of honey over it.
Step 9
Wrap the apple in dough, gathering the edges in folds around it. Repeat the process with the remaining apples.
Step 10
Cut out leaves from the scraps of dough and decorate the apples on top with them. Insert the stems into the apples.
Step 11
Brush the apples with egg yolk and place them in an oven preheated to 356°F for 35 minutes.
