Description

The key to success is a firm, juicy, and crispy apple, preferably from late summer or fall varieties that retain their qualities for a long time. The easiest option is to head to the grocery store and find 'Granny Smith' apples, as they usually work well in such recipes.

Ingredients

  • Apple - 3 pieces
  • Raisins - 1.8 oz
  • Walnuts - 1.8 oz
  • Honey - 3 spoons
  • Brown Sugar - 2.8 oz
  • Cinnamon - 0.4 oz
  • Butter - 3.5 oz
  • Milk - 3 fl oz
  • Wheat Flour - 3.5 oz
  • Corn Flour for Polenta - 1.8 oz
  • Chicken Egg - 1 piece
  • Whole egg - 1 piece
  • Salt - a pinch
  • Meyer Lemon Juice - 1 tablespoon

In a blender, combine cornmeal and 100 grams of cold butter until the mixture resembles fine crumbs.

Add a chicken egg, a pinch of salt, and lemon juice. Gradually pour in cold milk while kneading the dough with your hands.

Shape the dough into a ball, wrap it in plastic wrap, and place it in the freezer for 15–20 minutes.

Peel the apples and remove the cores. Discard the peels and cores, but keep the stems — they will be useful for decoration.

In a deep bowl, mix the sugar with cinnamon and coat the apples in this mixture.
