Apricot and Apple Pie
Ingredients
- Butter - 4.6 oz
- Farm fresh eggs - 4 pieces
- Sugar - 4.6 oz
- Wheat Flour - 8.8 oz
- Baking Powder - 1 teaspoon
- Vanillin - 0 oz
- Dried Apricots - 2.8 oz
- Apple - 3 pieces
- Rice Sweet Wine - 3 tablespoons
- Ground Cinnamon - to taste
Step by Step guide
Step 1
Soak the dried apricots in hot water for 5–10 minutes, then rinse them. Finely chop the apricots, drizzle with wine, and let them sit again (all the wine will be absorbed!).
Step 2
Separate the egg whites from the yolks and beat the whites well.
Step 3
Whisk the yolks with sugar until light, then mix in the butter. Add the vanillin.
Step 4
Sift the flour and baking powder into the yolk-butter mixture, and mix well. Then gently fold in the beaten egg whites and mix again. If the batter is too thick, I thin it out a bit with milk.
Step 5
Mix the chopped apricots into the batter as well.
Step 6
Wash, peel, and quarter the apples, making cuts on each quarter.
Step 7
Grease the baking dish well with butter, pour in the batter, and smooth it out.
Step 8
Place the apple quarters on top of the batter and sprinkle with cinnamon.
Step 9
Bake the pie in a preheated oven at 170–356°F for 40–50 minutes. If necessary, cover with foil if the top starts to burn.
