Ingredients

  • Dried Apricots - 5.6 oz
  • Boiling water - 1 cup
  • Wheat Flour - 2 cups
  • Sugar - ¾ cup
  • Salt - ½ teaspoon
  • Butter - 2.1 oz
  • Activated Baking Soda - 1 teaspoon
  • Buttermilk - 7.1 oz
  • Vegetable Oil - ¼ cup
  • Whole egg - 1 piece

Step by Step guide

Step 1

Preheat the oven to 392°F. Grease the muffin tin with butter or place paper liners in each cup.

Step 2

In a bowl, place finely chopped dried apricots and pour boiling water over them. Let sit for 5 minutes.

Step 3

In another bowl, mix together flour, sugar, baking soda, and salt.

Step 4

In a separate bowl, beat the egg with softened butter, vegetable oil, and buttermilk.

Step 5

Combine both mixtures and stir well. Add the apricots, draining the water, and mix again (the batter will be slightly lumpy).

Step 6

Fill the muffin cups two-thirds full with batter and bake for 15-20 minutes until done, checking with a toothpick.

Step 7

Leave in the pan for 1 minute, then transfer to a plate.
