Apricot-Orange Shortbread Pastry with Almonds
Ingredients
- Apricot Jam - 1 cup
- Orange bitters - 3 tablespoons
- Butter - 8.5 oz
- Sugar - ¾ cup
- Wheat Flour - 2 cups
- Almond - 1 teaspoon
- Salt - ¼ teaspoon
- Almond - ¼ cup
- Chopped almonds - 2.1 oz
Step by Step guide
Step 1
Preheat the oven to 320°F. Grease a rectangular baking dish with butter and line it with parchment paper. Grease the top with butter as well. In a small bowl, mix the jam and orange liqueur.
Step 2
Using a mixer, beat the softened butter and sugar together. Add the almond extract, then the flour and salt. Mix well. Transfer 1 cup of the dough to another bowl and add the almond paste, mixing well with your hands. Add half of the sliced almonds.
Step 3
Spread the remaining dough in the prepared dish and smooth it out. Spread the apricot jam on top and sprinkle the almond mixture over it with your hands. Sprinkle with the sliced almonds and gently press everything down.
Step 4
Bake the dessert for about 1 hour, until the top layer is golden brown. Cool in the dish and transfer to a plate. Cut into 32 small rectangles.
