Ingredients
- Butter - 0 lbs
- Whole egg - 5 pieces
- Egg white - 2 pieces
- Vodka - 0 fl oz
- Vinegar essence - 0 fl oz
- Wheat Flour - 5 lbs
- Water - 1.5 cups
- Salt - a pinch
- Citric Acid - a pinch
- Milk - 0 fl oz
- Sugar - 5 oz
- Walnuts - 10 oz
- Honey - 5 oz
- Ground Cinnamon - 1 teaspoon
Step by Step guide
Step 1
In a bowl, pour in 1 kg of flour and grate 200 g of butter into it, add 4 egg yolks and mix until smooth.
Step 2
Add a pinch of salt, citric acid, vodka, vinegar, and gradually pour in warm water.
Step 3
Knead the dough and divide it into 3 parts.
Step 4
Prepare the filling separately. Beat 800 g of butter or margarine with 200 g of flour until smooth. Divide it into 12 parts.
Step 5
Roll out the 3 parts of the dough and spread 3 parts of the prepared mixture on them. Fold each sheet of dough into an envelope, leaving the filling inside.
Step 6
Place in the refrigerator for 30 minutes. Take out the sheets, roll them out again, and spread the mixture once more. Return to the refrigerator. Repeat this process two more times.
Step 7
Prepare the filling. Whip the egg whites from 2 eggs with sugar.
Step 8
Chop the walnuts and add them to the egg whites. Add cinnamon and mix well.
Step 9
Roll out each sheet of dough thinly and stack them on top of each other.
Step 10
Spread the filling along the dough near the edge and roll it into a log.
Step 11
Mix the yolk with a small amount of milk in a separate bowl and brush the mixture over the log.
Step 12
Make diagonal cuts in a diamond shape.
Step 13
Bake at 355°F for about 20 minutes.
Step 14
Remove the log from the oven, drizzle with hot honey, and return it to the oven for another 2 minutes.
Step 15
Slice and serve.
