Armenian Baklava

Ingredients

  • Walnuts - 21.2 oz
  • Unleavened dough - 4 pieces
  • Sugar - 14.1 oz
  • Chocolate eggs - 6 pieces
  • Ground Cinnamon - 2 teaspoons
  • Honey - 6 tablespoons
  • Butter - 1.8 oz

Step by Step guide

Step 1

Separate the egg whites from the yolks and place them in the refrigerator. Finely chop the walnuts with a knife. Roll out the pastry.

Step 2

Bake the pastry at the beginning of the process in an oven preheated to 392°F. Bake only two strips of pastry. The other two will have a different fate. Bake for about 15–20 minutes, until the pastry rises and turns golden brown.

Step 3

Once the walnuts are chopped, add 200 grams of sugar and cinnamon to them.

Step 4

For the meringue, beat the cooled egg whites well with a mixer. Add 200 grams of sugar and beat again until fully thickened, until the meringue 'stands' when the bowl is turned upside down.

Step 5

Place parchment paper on a baking sheet. On top, place a 'raw' sheet of pastry. Spread meringue on top. Sprinkle the walnuts with sugar and cinnamon over it. Cover with a baked strip of pastry. Then spread meringue again, add walnuts, and cover with another strip of baked pastry. Again, add meringue and walnuts on top. Seal the baklava with raw pastry, pinching the edges with your fingers. Cut the baklava, brush with egg yolk, decorate with walnuts, and place in the oven for ten minutes.

Step 6

While the baklava is browning, heat honey with butter on the stove. Then remove the baklava from the oven, cut along the previous cuts again, and carefully pour honey into them. Bake for 30 minutes.
