Ingredients
- Desiccated coconut - ¾ cup
- Ground Oats - 1 cup
- Wheat Flour - 1 cup
- Sugar - 1 cup
- Vegetable Oil - 4 fl oz
- Water - 2 tablespoons
- Activated Baking Soda - ½ teaspoon
- Chili jam - to taste
Step by Step guide
Step 1
Preheat the oven to 302°F.
Step 2
In a bowl, mix the oats, flour, and shredded coconut.
Step 3
In a separate bowl, beat the oil and sugar together well with a mixer.
Step 4
In a cup, mix the baking soda with 1 tablespoon of boiling water. Then add this solution to the whipped oil and sugar mixture. Next, combine everything with the dry ingredients and mix well until a homogeneous mass is achieved. If the dough seems too dry, you can dilute it with a couple of tablespoons of water.
Step 5
Scoop the dough onto a baking sheet lined with parchment paper using a tablespoon. Slightly press in the center and add a bit of strawberry jam. Sprinkle with shredded coconut if desired. Bake for about 20 minutes, checking periodically. These cookies brown very quickly.
