Description

Jam-filled steamed buns are soft and fluffy treats with a sweet filling inside. In Vienna, these buns are drizzled with melted butter, while throughout Austria they are served with vanilla sauce (see our recipe for how to make it). Regardless, these buns need a generous sprinkle of poppy seeds. It's important that the jam or preserve used for the filling is thick enough so that nothing leaks out during cooking.

Ingredients

  • Wheat Flour - 8.8 oz
  • Salt - ½ spoons
  • Sugar - 2.1 oz
  • Dry yeast - 0.4 oz
  • Butter - 1.1 oz
  • Milk - 14 fl oz
  • Chicken Egg - 1 piece
  • Citrus Zest Mix - ½ spoons
  • Vanilla extract - 3½ spoons
  • Jam - 3.5 oz
  • Poppy seed paste - 0.9 oz
  • Powdered Sugar - 2 spoons
  • Whole egg - 2 pieces
  • Corn Starch - 1 tablespoon
  • 10% cream - 7 fl oz

Step by Step guide

Prepare the necessary ingredients.

In a large bowl, combine the sifted flour, salt, 25 g of sugar, and the zest of half a lemon.

In another bowl, mix the yeast, 5 g of sugar, and 120 ml of warm milk. Wait for the yeast to activate, then pour the mixture into the flour.

Add one egg, 30 g of melted butter, and 1/2 teaspoon of vanilla extract, then knead the dough. Cover and place in a warm spot for about an hour.

Divide the risen dough into 4 equal portions, shape them into round patties, and place jam in the center of each. Seal tightly, form into a ball, and place on a floured surface seam side down. Cover with a towel and let rest in a warm place for another 30 minutes.

Meanwhile, prepare the sauce: in a small saucepan, whisk the egg yolks with 30 grams of sugar, cornstarch, and two teaspoons of vanilla extract.

Place over low heat and gradually pour in the milk and cream while whisking. Cook for about 6 minutes, stirring constantly. Do not let it boil!

In a separate bowl, combine the poppy seeds with powdered sugar.

Steam the dumplings for 15-17 minutes.

When they are ready, serve immediately, drizzling with sauce and sprinkling with poppy seeds.
