Description

Kaiserschmarrn is a dish where the pancake not only should not be thin but must also come off the skillet in pieces, if not clumps. It uses a sweet pancake batter, but it should be poured generously—Kaiserschmarrn needs to be thick. Once the bottom side is golden brown, it’s impossible to flip it while keeping it intact, so feel free to cut the pancake into small pieces and turn them over. There are two versions of its origin. One suggests that a chef for Emperor Joseph of Austria used to make thin pancakes, but when the pancakes turned out too thick and he couldn't flip them carefully, he would tear them apart, call them 'Kaiserschmarrn,' and serve them to the staff. The other version tells of a cook for the same emperor who couldn't manage to make a sweet omelet properly, yet the emperor decided to eat it anyway—albeit in a form unworthy of the imperial table. As a result, Kaiserschmarrn transformed from a staff meal into a beloved dessert in the salons of Vienna.

  • Raisins - 2 spoons
  • Vanilla extract - ½ spoons
  • Sugar - 3 spoons
  • Rum - 1 tablespoon
  • Citrus Zest Mix - to taste
  • Salt - a pinch
  • Butter - 0.7 oz
  • Powdered Sugar - to taste

Prepare the necessary ingredients.

Mix the raisins with rum and let it sit for 15 minutes.

Separate the egg whites from the yolks.

Whisk the egg whites to soft peaks with a pinch of salt.
