Ingredients
- Butter - 7.1 oz
- Powdered Sugar - 3.5 oz
- Egg white - 2 pieces
- Salt - 1½ g
- Wheat Flour - 10.6 oz
- Vanillin - 0.1 oz
- Almond - 7.1 oz
- Pear Jam - 5.3 oz
Step by Step guide
Step 1
Beat the softened butter with a mixer along with the vanilla, salt, and powdered sugar until fluffy and pale.
Step 2
Add the egg whites and whip again on the highest speed until fluffy cream forms.
Step 3
Gradually fold in the flour with a spatula, making sure to mix the dough thoroughly each time.
Step 4
Transfer the dough to a piping bag fitted with a star nozzle.
Step 5
Line a baking tray with a silicone mat or parchment paper and pipe small rosettes of dough (each weighing 20–30 grams) spaced apart from one another.
Step 6
Use a teaspoon or your finger to make an indentation in each pastry. Fill it with a bit of jam and garnish with a nut.
Step 7
Bake the kurabie in a preheated oven at 374°F (375 degrees Fahrenheit) without a fan for 10–12 minutes. If your oven is not ideal and bakes unevenly, turn the baking sheet 180 degrees a couple of times during the process.
Step 8
Let the cookies cool for a bit, then dust them with powdered sugar. Serve them slightly warm or completely cooled.
