- New Potatoes - 17.6 oz
- Onion - 1 head
- Olive Oil - 5 fl oz
- Parsley - 2.1 oz
- Chicken Egg - 6 pieces
Step by Step guide
Step 1
Wash the young potatoes (you can leave the skin on) and cut them into thick pieces. Finely chop the onion.
Step 2
Heat oil in a skillet, add potatoes and onions, and sauté over low heat, covered, for 30 minutes, stirring occasionally, until the potatoes are tender. Drain the potatoes and onions in a colander, reserving the drained oil.
Step 3
In a separate bowl, beat the eggs, then add the potatoes and parsley, seasoning with salt and pepper. Heat the reserved oil in a small saucepan. Transfer everything to the prepared skillet and cook over low heat, flattening the omelet with a spatula.
Step 4
When the eggs are set, flip the omelet onto a plate, then let it slide back into the pan and cook for a few minutes on the other side. Flip it again, browning the other side while pressing down with a spatula to maintain the omelet's shape. Transfer to a plate and let cool for 10 minutes before serving.
