- Egg white - 4 pieces
- Chopped almonds - 19.4 oz
- Sugar - 17.6 oz
- Cinnamon - 1 tablespoon
- Water - 2 fl oz
- Citrus Zest Mix - 2 pieces
- Salt - a pinch
Step by Step guide
Step 1
Whip the egg whites until stiff peaks form. Finely chop the almonds and place them in a bowl. Add the whipped egg whites, sugar, cinnamon, grated zest of 2 large lemons, water, and salt. Mix everything thoroughly.
Step 2
Grease a baking sheet with butter. Using a teaspoon, separate small pieces of the dough, roll them into balls, and place them on the baking sheet with some space between each.
Step 3
Place the cookies in a preheated oven at 356°F and bake for about 20 minutes, making sure they do not darken. The balls are especially delicious if they remain soft inside the crispy surface.
