Baked Apricots with Ginger Cream

Ingredients

  • Grated Ginger Root - 1 tablespoon
  • Cream (40%) - ½ cup
  • Sugar - 1 tablespoon
  • Pitted Wild Apricots - 17.6 oz
  • Brown Sugar - 4 teaspoons
  • Butter - 1 tablespoon
  • Cardamom - 0.1 teaspoons

Step by Step guide

Step 1

Preheat the grill in the oven.

Step 2

In a large bowl, squeeze the juice from the ginger wrapped in cheesecloth — you should get about 1 teaspoon of juice. Add the cream and white sugar to the juice. Whip with a mixer until thick foam forms and refrigerate.

Step 3

Cut the apricots in half and remove the pit. Place them on a baking sheet cut side up and sprinkle with brown sugar. Top with pieces of butter and sprinkle with cardamom. Place under the grill for 2–5 minutes until golden.

Step 4

Serve in dessert bowls, garnish with cream, and serve immediately.
