Baked Eggs Mexican Style

Ingredients

  • Olive Oil - to taste
  • Large eggs - 4 pieces
  • Mild Chili Spice - 1 piece
  • Avocado - 1 piece
  • Lime - 1 piece
  • Ground coriander - 2 sprigs
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Grease a small skillet or round baking dish with olive oil, then crack the eggs into it.

Step 3

Finely chop the red chili pepper (remove seeds if desired) and sprinkle it over the eggs.

Step 4

Peel the avocado and remove the pit, then slice it. Cut the lime in half and squeeze the juice from one half.

Step 5

Arrange the avocado around the eggs and season with a little sea salt and black pepper. Add the lime juice.

Step 6

Place in the oven for 7–10 minutes or until the whites are set but the yolks are still runny.

Step 7

Tear and roughly chop a few cilantro leaves and sprinkle them over the eggs, then cut the remaining half of the lime into wedges for squeezing.

Step 8

Serve with hot buttered toast.
