Baked Eggs with Chorizo and Brie Cheese

Ingredients

  • Butter - 2 teaspoons
  • Chorizo - 2 pieces
  • 10% cream - 3 fl oz
  • Brie cheese - 3.5 oz
  • Large eggs - 2 pieces
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Prepare 2 coffee cups by greasing them with butter.

Step 3

Finely chop the chorizo and evenly place it at the bottom of the cups, reserving some for garnish.

Step 4

Pour a small amount of cream over the chorizo.

Step 5

Crack the eggs into the cups, ensuring the yolks remain intact.

Step 6

Cut the brie into triangular slices of about 25 grams and carefully insert them into the cup with the point facing down, without damaging the yolk.

Step 7

Add a bit more chorizo for decoration and sprinkle with ground black pepper to taste.

Step 8

Leave in the oven for 10–15 minutes until the egg whites are cooked.
