Baked Eggs with Vegetables
Ingredients
- Olive Oil - 1 tablespoon
- Courgette - 14.1 oz
- Marinated cherries - 7.1 oz
- Chicken Egg - 2 pieces
- Garlic - 1 clove
- White bread - to taste
- Basil - to taste
Step by Step guide
Step 1
Heat the oil in a skillet, add the zucchini. Sauté for 5 minutes, stirring, until they become soft. Add the tomatoes and garlic, cook for a few more minutes.
Step 2
Lightly season the vegetables, then create 2 spaces and carefully crack the eggs into them. Cover the skillet with a lid, cook for 2–3 minutes, until the eggs are cooked to your liking. Sprinkle with fresh basil and serve with crispy bread.
Step 3
Alternatively, after sautéing, you can transfer the vegetables to a baking dish and add the eggs there. Bake in the oven at 356°F for about 10 minutes.
