Baked Fig with Raspberry and Yogurt Cream

Ingredients

  • 33% Cream - 2 fl oz
  • Natural Yogurt - 8 fl oz
  • Kirsch - 0 fl oz
  • Fig - 8 pieces
  • Powdered Sugar - 1.6 oz
  • Sugar - 0.5 oz
  • Meyer Lemon Juice - 0 fl oz
  • Raspberry leaves - 6.3 oz

Step by Step guide

Step 1

Place the yogurt in several layers of cheesecloth and hang it over a bowl for about 2 hours, until the volume reduces to 120 ml.

Step 2

In a clean bowl, whip the cream well and add the yogurt, powdered sugar, and kirsch (if desired). Whip again.

Step 3

Preheat the oven to 446°F.

Step 4

Cut the figs lengthwise into 4 pieces and place them on a baking sheet, cut side up, in a single layer. Sprinkle with sugar and drizzle with lemon juice. Bake for about 15 minutes, until the figs are hot and the sugar has melted.

Step 5

In serving dishes, layer the yogurt cream, then the warm figs, and top with raspberries. Serve immediately.
