Baked muesli with almonds, blueberries, and coconut milk

Ingredients

  • Honey - to taste
  • Large Chicken Egg - 1 piece
  • Coconut Milk - 16 fl oz
  • Salt - ¼ teaspoon
  • Ground Cinnamon - ½ teaspoon
  • Oat flakes - 8.5 oz
  • Brown Sugar - 2.5 oz
  • Blueberries - 5.3 oz
  • Almond Flakes - 1 tablespoon
  • Greek Yogurt - to taste

Step by Step guide

Step 1

Preheat the oven to 190°C (375°F). Grease a 20 cm square baking dish with cooking spray.

Step 2

In a medium bowl, beat the egg until slightly frothy.

Step 3

Gradually add the coconut milk, honey, salt, and cinnamon, stirring constantly.

Step 4

In a large bowl, combine the oat flakes and sugar, then pour in the coconut mixture.

Step 5

Add the blueberries and almonds, and mix well.

Step 6

Evenly spread the mixture in the prepared dish and top with the remaining blueberries and almonds.

Step 7

Bake for 25-30 minutes or until the muesli is golden brown.

Step 8

Serve warm or at room temperature, drizzling with yogurt and honey if desired.
