Ingredients
- Pears - 2 pieces
- Dried cranberries with sugar - 5.6 oz
- Sorghum Syrup - 7 fl oz
- Maple syrup - 1 fl oz
- Cinnamon - a pinch
- Meyer Lemon Juice - 1 tablespoon
- Nutmeg - a pinch
- Coconut Milk - 1 tablespoon
- Coconut Milk - 7 fl oz
- Ginger - 0.4 oz
- Vanilla extract - ½ spoons
- Fresh Mint - 0.7 oz
Step by Step guide
Step 1
Cut the pears in half and remove the core. Place them cut side up in a baking dish and put them in a preheated oven at 356°F for fifteen minutes.
Step 2
Place the cranberries, half the volume of sorghum syrup (or cane sugar syrup), maple syrup, lemon juice, cinnamon, and nutmeg together in a blender and blend until smooth (it can also be strained through a sieve). Refrigerate to cool.
Step 3
Then blend the remaining sorghum syrup with coconut milk, oil, grated ginger, and vanilla extract.
Step 4
Remove the pear from the oven and, while it's still warm, drizzle both sauces over it — first the coconut sauce, then the cranberry sauce. Garnish with mint leaves on top and serve.
