Place the 'Korean' persimmons in a buttered baking dish and put it in an oven preheated to 356°F for twenty minutes.

While the persimmons are baking, prepare the syrup. Finely chop the mint leaves. Grate the lemon zest and squeeze the juice from two lemons. Combine the lemon juice and zest with sugar and chopped mint, and simmer in a saucepan over low heat until the sugar dissolves and the syrup begins to thicken slightly.
