Ingredients
- Sweet Potato - 1 piece
- Sour Cream - 0.5 oz
- Semi-soft cream cheese - 0.5 oz
- Orange zest - to taste
- Beef - 1.6 oz
- Maple syrup - 0 fl oz
- Chicken Egg - 1 piece
- Butter - 0.6 oz
- Olive Oil - 0 fl oz
- Shallot - 0 oz
- Ocean salt - to taste
Step by Step guide
Step 1
Preheat the oven to 374°F. Pour sea salt onto a baking tray and place the unpeeled sweet potato on top. Bake in the oven for 40-60 minutes, until the sweet potato is tender.
Step 2
Mix sour cream with cream cheese, lime zest, and finely chopped green onions.
Step 3
Fry the bacon until golden brown, then add maple syrup and caramelize the bacon for one minute.
Step 4
Cut off the top of the skin from the cooked sweet potato and carefully scoop out the flesh, making sure not to damage the skin.
Step 5
Add the butter and garlic oil to the sweet potato flesh and mix thoroughly.
Step 6
Return the sweet potato flesh to the skin.
Step 7
Roll the bacon into a rose shape and place it on the sweet potato.
Step 8
Poach an egg. To do this, crack the egg into gently simmering salted water, being careful not to break the yolk, and cook for 3–4 minutes. Next to the bacon, place the crème fraîche, and on top of it, add the poached egg.
Step 9
Garnish the finished dish with finely chopped green onions and serve.
